Sweet Potato Helper

We experimented w/ making sweet potato fries last week and they came out pretty good! Ava, of course, LOVED them! They were a little too soggy for my liking. I don't know why they came out so limp, but nevertheless, they were tasty.

I peeled and cut them into strips and drizzled on some EVOO. Baked for about 25 minutes at 425* and ta-da! A (somewhat) healthy treat!

Hey Meg - We make Sweet Potato fries all the time..and ours are always limp too! If you want to give them a kick (not in the limp factor, but just to add som spice) mix 1 tbsp brown sugar, 1/2 tsp salt, a pinch of Cayenne Pepper and a pich of Cinnamon together in a bowl. Then toss the fries in the mix right after they come out of the oven. This may be a bit spicy for Ava, so watch out!
